Sweet Potato Scones

A delicious treat with a hint of autumn

Ingredients:

2 ¼ cups flour
¼ cup brown sugar
2 tsp. baking powder
1 ½ tsp. pumpkin pie spice
¾ tsp. salt
¼ tsp. baking soda
1/3 cup cold butter
1 egg
1 cup mashed sweet potato
1/3 cup buttermilk

Directions:

Mix dry ingredients. Cut in butter. Add egg, sweet potato, and buttermilk to moisten. Knead the dough 10-12 times. Pat into an 8 inch circle, then cut into 8 wedges. Place on a greased cookie sheet.

Bake at 400 degrees for 16-21 minutes. This is a wonderful snack with coffee or tea.
